9 Grain Wheat Bread



9 GRAIN WHEAT BREAD
Subway Copycat Recipe

2 1/2 cups enriched wheat flour
2 tablespoons whole wheat flour
2 cups hot water
1/2 cup 9-grain wheat cereal
3 tablespoons powdered milk
2 tablespoons honey
1 packet active yeast
1 egg 1 teaspoon salt

In a large bowl or bowl of an electric mixer, mix together the water, cereal, 1 cup of flour, the whole wheat flour, honey and yeast. After these ingredients are mixed well, allow them to sit for about half an hour, until the mixture is bubbly. Mix in the remaining ingredients, using a dough hook attachment or your hands. Dump the dough onto a floured surface, and knead until it is smooth and elastic, about five minutes. Be careful not to over knead, or else the bread will be too tough. Allow the dough to rise, covered, in a warm place for about an hour. Heat the oven to 350 degrees. Form the dough into long loaves. Bake for 30 to 35 minutes, until golden brown.
