MONTEREY CHEDDAR BREAD
Subway Copycat Recipe
1 recipe Subway Basic Italian Bread; shape the loaves, but do not bake (see sidebar for recipe)
1/2 cup of Monterey Jack cheese, grated
1/2 cup of cheddar cheese, grated
Prepare the base dough by following the instructions for making Subway's Italian bread: mix and knead the dough, allow it to rise, and then form the loaves as directed. Mix the Monterrey Jack cheese and cheddar cheese in a bowl. Using a serrated knife, slice each loaf down the center and press the cheese mixture on top of the loaves. Allow the loaves to rest for about an hour in a warm place, covered with a towel, so they rise.
Preheat oven to 375 degrees. Place a pan of hot water on the bottom shelf of the oven. The steam helps the bread to stay moist in the center. Cook for approximately 25 minutes, or until the loaves are golden brown on top. Take the bread out of the oven and let it cool to room temperature. For added flavor, brush the bread with melted butter.
